Enamelled Cast Iron and What It Is Actually For

A heavy enamelled pot is one of the more expensive things in a home kitchen and one of the most misunderstood. It is not a better frying pan; it is a different tool entirely.

What the Material Does

Cast iron is slow to heat and slow to let go. Its thermal mass is large enough that opening an oven door barely affects what is happening inside the pot.

That is exactly what a three-hour braise needs: a stable low temperature that does not fluctuate with the hob or the oven cycling.

The enamel is a glass coating fused to the iron. It removes the need for seasoning, allows acidic food to be cooked without reacting with bare iron, and gives a surface that goes to the table.

What It Is Good At

  • Bread, where a lidded pot traps steam and produces a crust

What It Is Poor At

Anything needing fast response. Turning the heat down under cast iron does very little for several minutes, because the pot holds what it already has.

The One Real Vulnerability

Enamel chips, and it chips from shock rather than from heat.

Cold water hitting a hot pot is the classic cause, along with knocks against a tap or another pan. Once chipped, bare iron is exposed and will rust.

Let it cool before it meets the sink. Wooden or silicone tools rather than metal. Do not stack other pans inside it without something between them.

Low Heat Is Enough

A genuine efficiency point. Because the material distributes and retains heat so well, cast iron needs a lower setting than most people use.

High heat under an enamelled pot risks damaging the enamel and does not cook anything faster. Medium-low gets it there.

Cleaning

Hand wash. Dishwasher detergent dulls enamel over time and the sustained heat is unnecessary.

For stubborn residue, simmer water in it and let it lift, or use bicarbonate of soda. Avoid metal scourers, which scratch the glass surface.

The Interior Will Stain

Light-coloured enamel interiors darken with use, particularly from browning and from tomato. That is patina rather than damage.

A bicarbonate paste or a hydrogen peroxide soak lightens it if the appearance bothers you.

It Lasts Decades

Kept from thermal shock, an enamelled pot outlives everything else in the cupboard.
